Sirene is a Bulgarian brined white cheese, similar to feta, made with sheep's, goat's or cow's milk. It has a characteristic aroma and a sharp taste, saltier than feta.
Sirene is said to have originated in the Trakia region in southern Bulgaria. It is used in everything from shopska salad to savory banitza.
