Quail egg
Quail eggs have the same flavor as chicken eggs, but are three times smaller. These Lilliputians have an attractive greenish beige shell speckled with brown.
Buying
They are sold plain or in vinegar.
Cooking
They are usually served hardboiled as an appetizer. They’re just the right size for stuffing a cherry tomato. Pipe on a little mascarpone and garnish with a sprig of basil.
