Mini Crostini with Prosciutto

Ingredients for 15 crostini

- 5 slices of authentic Prosciutto
- 1 small baguette, 5 cm / 2" in diameter
- Extra virgin olive oil
- Pesto sauce, sundried tomato paste or olive paste
- 75 g (3 oz.) cream cheese
- 4 stuffed green olives, sliced
- 4 hardboiled quail eggs
  1. Cut the baguette into thin diagonal slices; brush with olive oil and place under the broiler until golden brown.
  2. Spread with a thin layer of cheese and pesto, tomato or olive paste.
  3. Cut the prosciutto into thin strips; roll up and place one on each baguette slice.
  4. Garnish with olives and slices of quail egg.
