Flank Steak
Flank steak is one of what are commonly called "butcher's cuts," since they're difficult to cut. Only small amounts are present on the animal and they require a great deal of work on the part of the butcher, who needs patience to prepare them.
Flank is often served as steak, but to prevent it from toughening, it should be eaten rare.
