Ras El Hanout is a truly dazzling combination of spices and herbs that is traditionally improvised by Moroccan merchants in their souks. Depending on the needs of the customer and the complexity of the dish, Ras El Hanout can be comprised of over fifty ingredients such as nutmeg, cinnamon, rosebuds, pepper, ginger, allspice, turmeric, cloves, cardamom, chilies, lavender, plus the occasional ingredient famous for its aphrodisiac qualities. "Ras el hanout"" means head of the shop, or the ""best of the best"", and only the finest, and often the most esoteric, ingredients are used.
Using
Ras el Hanout is distinctively Moroccan in character, and is commonly used during the winter months in foods intended to warm the body.
The beguiling flavours of Ras el Hanout will complement many of your favorite dishes. Mix with olive oil to marinate chicken and lamb; or with flour as a delicious coating for chicken or fish. Add to rice, couscous, soups, tajines and stews. To season game...
