  • Buying
  • look for firm, very white roots
  • with no marks or bruises
  • choose small to medium daikon

Storing
daikon can be kept, unwashed, in the refrigerator for 10-15 days

Flavor
slightly sweet root
the flavor of the leaves is somewhat like cardoon or cabbage, though milder

Texture
slightly crunchy

Use

  • wash and drain the daikon
  • cut off each end; reserve the leaves
  • slice into thin rounds; chop the leaves thinly lengthwise
  • steam or cook in boiling water
  • widely used in stir fries and wok cooking to add an Asian flavor
