Australian Salad – Beets, Feta and Arugula Recipe
Chef's Note
There are some star products in Australian cooking, including beets - which even find their way into burgers – as well as Tasmanian feta, arugula and macadamia nuts.
If you don’t have macadamia nuts, you could substitute cashews, which are the most similar.
Ingredients
For 2 servings
- 500 ml / 2 cups or 1 can of cooked beets
- 100 g / 4 big handfuls of arugula
- 90 g feta
- 10 macadamia nuts
- 30 ml / 2 Tbsp. olive oil
- 45 ml / 3 Tbsp. cider vinegar
- salt and pepper
Method
- In a dry skillet, toast the nuts and set aside.
- Combine the cider vinegar, olive oil, salt and pepper; pour over the arugula.
- Divide the dressed arugula between the plates. Add the cut up beets, crumbled feta and the nuts.
