Banana-Sesame Fritters (Noum chek chien) Recipe
Ingredients
For 4 servings
- 8 small slightly underripe bananas
- 2 tbsp. sesame seeds
- 3 tbsp. palm sugar
- 5 large tablespoonfuls of rice flour
- 3 egg whites
- Coconut milk (approx. 300 ml)
- A small pinch of salt
Materials
- Fairly thick plastic wrap or a square of parchment paper
Method
- Combine the rice flour, sesame, salt and palm sugar.
- Incorporate the egg whites, then the coconut milk gradually until the mixture has the consistency of a thick pancake batter.
- Peel the bananas. Roll each banana in plastic wrap. Place a weight on top (such as a saucepan or baking dish) and press down to lightly crush the banana without mashing it.
- Heat some oil in a deep-fryer or pot.
- Dip the bananas quickly into the batter and fry them two at a time until golden and crispy. Serve immediately.
