Banana-Sesame Fritters (Noum chek chien)

Ingredients
For 4 servings

- 8 small slightly underripe bananas
- 2 tbsp. sesame seeds
- 3 tbsp. palm sugar
- 5 large tablespoonfuls of rice flour
- 3 egg whites
- Coconut milk (approx. 300 ml)
- A small pinch of salt

Materials
- Fairly thick plastic wrap or a square of parchment paper
Method
  1. Combine the rice flour, sesame, salt and palm sugar.
  2. Incorporate the egg whites, then the coconut milk gradually until the mixture has the consistency of a thick pancake batter.
  3. Peel the bananas. Roll each banana in plastic wrap. Place a weight on top (such as a saucepan or baking dish) and press down to lightly crush the banana without mashing it.
  4. Heat some oil in a deep-fryer or pot.
  5. Dip the bananas quickly into the batter and fry them two at a time until golden and crispy. Serve immediately.
