Swordfish with Salmoriglio Sauce

For 4 servings

- 600 g (1 1/2 lb.) swordfish
- 2 tsp. olive oil

- 40 ml (3 tbsp.) olive oil
- 1 lemon
- 1 clove of garlic
- Salt and pepper
- 1 bunch of parsley
- A pinch of oregano
- 2 stalks of celery
  1. First make the sauce by combining all the sauce ingredients with 1 tbsp. hot water;
  2. brush the swordfish steaks with olive oil and season with salt;
  3. heat a grill and cook the swordfish on both sides over high heat. The center needs to be "half-cooked" so the meat will stay moist and not dry.


  1. place the fish on a plate; spoon the sauce over top and serve immediately.
