Marinated Fish Brochettes

Chef's Note
This recipe was designed to showcase a variety of frozen products available on the market (fish, herbs), but you could combine both fresh and frozen ingredients depending on the season and availability.
Ingredients for 6 servings
- 6 frozen fillets of firm-fleshed fish (Sea Bream or other)
- 4 lemons
- 5 tbsp. olive oil
- 2 tbsp. frozen oregano and thyme
- Salt and pepper
  1. Defrost the fish fillets in the refrigerator and pat them dry.
  2. Prepare the marinade by combing the juice of two lemons, the olive oil, oregano and thyme in a bowl.
  3. Cut the fish into approximately 3 cm (1 1/4") cubes.
  4. Slice the remaining lemons into small wedges.
  5. Thread the cubes of fish onto 6 skewers, interspersing them with pieces of lemon.
  6. Place the skewers into a dish and pour the marinade over top. Let marinate in the refrigerator for 30 minutes.
  7. Cook on the barbecue or under the broiler for 10 minutes, turning the skewers once or twice.
  8. Before serving, brush with the remaining marinade.
