Bottled Tomato Coulis Recipe

- Tomatoes
- A little oil
- 1 clove of garlic per 500 g (1 lb.) tomatoes
- 1 sprig of basil per kilogram (2 lb.) tomatoes
- Salt and pepper
Method
- Drop the tomatoes into boiling water for a few seconds; the skin will shrivel and can then be easily removed; quarter the tomatoes;
- thoroughly oil a large saucepan; add the tomatoes and let cook over low heat for 10-12 minutes; season with salt and pepper; add the garlic and basil; continue cooking until the excess juice has evaporated;
- pack into jars and put the lids on; sterilize for 45 minutes.
