Boursault Brebis and Honeyed Pears Recipe

Chef's Note
You can peel the pears once they are poached, if you prefer.
You can replace pea juice by apple juice or white grape juice.
Ingredients
For 4 servings
- 4 pears
- 1 litre / 4 cups pear juice
- 6 black olives
- 1 sprig of thyme
- 1 sprig of rosemary
- 1 boursault brebis - 200 g
- 1 drizzle of olive oil
- 30 ml honey
Method
- Halve the pears, leaving the skin on.
- Poach for 10-15 minutes in the pear juice and honey.
- Combine the Boursault Brebis with the chopped black olives and thyme and rosemary leaves.
- Add a drizzle of olive oil.
- Fill the pear halves generously with the mixture.
- Place under the broiler for 2 minutes.
