Braised Zucchini - Tsjau jie gwa

Ingredients
Ingredients for 4 servings
- 4 tbsp. peanut oil
- 1 large onion, sliced
- 1 clove of garlic, minced
- 1 tbsp. sesame oil
- 1 tbsp. light soy sauce
- 2 tbsp. powdered sugar
- 1 tbsp. oyster sauce
- 2 tbsp. Chinese wine vinegar
- Salt
Method
  1. cut off the ends of the zucchini; slice them diagonally into 1.25 cm (1/2") pieces;
  2. heat the oil in a wok; sauté the sliced onion for 30 seconds;
  3. add the garlic and zucchini; cook over high heat for 2 minutes;
  4. add the soy sauce, oyster sauce, sesame oil, salt and sugar; mix well;
  5. add 6 tbsp. sugar; reduce the heat and simmer until the liquid has almost completely evaporated, turning the zucchini occasionally;
  6. transfer to a platter and serve hot.
