Brazilian Tapioca with Grape Juice

- 250 ml (1 cup) small grain Tapioca
- 250 ml (1 cup) water, for soaking
- 750 ml (3 cups) red grape juice or 500 ml (2 cups) red wine + 250 ml (1 cup) water
- Sugar to taste
  1. Soak the tapioca in the water for 30 minutes;
  2. place the grape juice or wine and water in a saucepan with the tapioca and sugar; bring to a boil over very low heat, stirring constantly with a wooden spoon; then cook for 30 minutes, stirring occasionally until the tapioca grains turn clear;
  3. pour into a serving dish or individual bowls; refrigerate;
  4. serve with Leite Creme or a passion fruit coulis.
