Bread and Pear Gratin Recipe

Ingredients
Ingredients for 10 servings
- 500 g (18 oz.) milk buns or Bread
- 75 g (5 tbsp.) butter
- 1.7 kg (3 3/4 lb.) Pears
- 800 ml (3 1/4 cups) apple juice
- 150 g (5 oz.) hazelnuts
- 250 g (9 oz.) chopped chocolate
Custard
- 300 g (1 1/4 cups) eggs
- 1 liter (4 cups) milk
- 25 g (1 oz.) vanilla sugar
- 75 g (5 tbsp.) sugar
Method
- Slice the bread thinly (5 mm); brown in butter.
- Peel the pears; core and dice them; poach in the apple juice and set aside; pour the juice over the bread. Coarsely chop the hazelnuts.
- Combine the bread, pears, hazelnuts and chocolate. Pour into individual greased gratin dishes.
- Combine the ingredients for the custard and pour over top.
- Bake in a 220° C (450° F) oven for 25 minutes.
