Bread and Raspberry Napoleons with Vanilla Cream

Ingredients
Ingredients for 10 servings
Vanilla cream`
- 1 liter (4 cups) milk
- 130 g (5 oz.) egg yolks
- 25 g (2 1/2 tbsp.) cornstarch
- 2 vanilla beans, seeds scraped
- 75 g (5 tbsp.) sugar
For the napoleons
- 30 thin slices of brioche or braided Bread (about 500 g / 18 oz.)
- 125 g (4 oz.) butter at room temperature
- 1 kg (2 1/4 lb.) raspberries (Raspberry)
- 75 g (5 tbsp.) sugar
Method
  1. Vanilla cream: combine all the ingredients; place over medium heat, stirring constantly until it comes to a boil; immediately remove from the heat.
  2. Let cool. Lightly butter the bread slices on both sides; brown on both sides. Add the sugar to the raspberries.
  3. Assemble as individual desserts, layering bread, fruit and cream.
