Brick and Broccoli Triangles Recipe

Serve warm on a dressed mesclun salad accompanied by a few cherry tomatoes.

- 6 sheets of brick pastry
- 2 heads of broccoli
- 50 g (3 tbsp.) butter
- 1 tbsp. olive oil
- Salt and pepper
- Mesclun salad
- A pinch of curry
- 1 basket of cherry tomatoes
Method
- Cook the broccoli for 10 minutes in well-salted water.
- Drain and separate the florets. Mash with a fork. Add the curry and olive oil. Season with salt and pepper.
- Melt the butter. Brush a sheet of brick pastry with melted butter.
- Place another sheet on top to form a double layer. Cut into 6 triangles.
- Place a brick triangle on a plate. Place a spoonful of the broccoli mixture in the centre.
- Fold the edges over toward the centre and close the triangle. Brush with a little egg yolk and bake in a 180° C oven for 10 minutes.
