Broccoli Flans Recipe

Total time: 30 to 60 minutes
Preheat oven to 160° C (300° F)
Preparation time: 10 minutes
Cooking time: 45 minutes

Ingredients
For 4 servings
- 2 heads of broccoli
- 20 g (2/3 oz.) flaked almonds
Flan mixture
- 250 ml (1 cup) milk
- 250 ml (1 cup) cream
- 3 eggs + 4 yolks
- A pinch of nutmeg
Method
- Separate the broccoli into small florets. Cook for 5-6 minutes in boiling salted water. Drain well and blot with a towel to remove as much water as possible.
- Make the flan mixture by combining the milk, cream, eggs, yolks and nutmeg.
- In a bowl, combine the broccoli, flan mixture, almonds, salt and pepper.
- Pour into individual ramekins and place in a high-sided baking dish. Add hot water to come half-way up the ramekins and place in a 160° C (300° F) oven for 30-35 minutes.
- Unmold onto plates or serve in the ramekins.
