Chef's Note
Emerald-colored like the Minho province where it originated, this soup has become popular throughout Portugal. Flavored with a big piece of spicy chorizo, the cabbage soup can be served with cornbread and black olives.
Ingredients
Ingredients for 4 servings
- 1/4 Cabbage
- 400 g (14 oz.) potatoes
- 1 Chorizo
- 1.5 liters (6 cups) water
- 1 clove of garlic
- 1 onion
- 4 tbsp. oil
- Salt and pepper
Method
- cook the peeled potatoes, onion and garlic in boiling water with a pinch of salt;
- remove the potatoes and mash with a fork; keep the cooking water at the boil;
- slice the cabbage thinly and slice the chorizo; add to the broth and cook for 3 minutes;
- add the mashed potatoes; mix well;
- season with salt and pepper; ladle into bowls and drizzle with olive oil.
