Café brûlot Recipe

Chef's Note
This is an old traditional recipe from New Orleans, served with great fanfare in some of the city's great restaurants.
Tip
To pour a hot liquid into a glass, first place a spoon in the glass then pour the liquid over the spoon in order to prevent the glass from cracking.
Ingredients
Ingredients for 4 servings
- 1 liter (4 cups) strong Coffee
- 175 ml (3/4 cup) brandy
- 4 tbsp. curaçao
- 6 cloves
- 1 cinnamon stick
- The zest of an orange in a single spiral
- The zest of a lemon in a single spiral
- 4 tbsp. sugar
Method
- Place all the ingredients except the coffee in a saucepan; heat over low heat without boiling until the sugar is dissolved;
- pour in the hot coffee;
- pour into deep glasses or cups and serve immediately.
