Chef's Note

This is an old traditional recipe from New Orleans, served with great fanfare in some of the city's great restaurants.

To pour a hot liquid into a glass, first place a spoon in the glass then pour the liquid over the spoon in order to prevent the glass from cracking.

Ingredients for 4 servings

- 4 tbsp. curaçao
- 6 cloves
- 1 cinnamon stick
- The zest of an orange in a single spiral
- The zest of a lemon in a single spiral
- 4 tbsp. sugar
  1. Place all the ingredients except the coffee in a saucepan; heat over low heat without boiling until the sugar is dissolved;
  2. pour in the hot coffee;
  3. pour into deep glasses or cups and serve immediately.
