Carolina Halibut with Wild Mushrooms, Butter Beans and Country Ham Juice Recipe

Ingredients
Ingredients for 6 servings
- 4 fillets of Halibut
- 225 g (8 oz.) chanterelles, cleaned well
- 340 g (12 oz.) butter beans, blanched and peeled
- 180 g (6 oz.) country ham
- 1 ham hock
- 1 large carrot
- 1 medium onion
- 2 stalks of celery
- 285 g (1 1/4 cups) mineral water
- 1 tsp. lemon juice
- 2 tbsp. butter
- 1 tbsp. extra virgin olive oil
- 1 shallot, minced
- Salt and pepper
Method
Country ham juice
- Dice the ham, carrot, onion and celery.
- Place them in a pot with the ham hock; cover with water and bring to a boil.
- Reduce the heat and simmer for 1 hour; whisk in the butter. Set aside.
Vegetables
- Sauté the mushrooms in a drizzle of olive oil with the minced shallot.
- When the mushrooms are tender, add the butter beans. Season with salt and pepper and set aside.
Cooking the halibut and serving
- Season the halibut and sear for 1 minute on each side.
- Place the vegetables into deep plates; place the halibut on top. Spoon on the juice and serve immediately.
