Carolina Halibut with Wild Mushrooms, Butter Beans and Country Ham Juice

Ingredients
Ingredients for 6 servings
- 4 fillets of Halibut
- 225 g (8 oz.) chanterelles, cleaned well
- 340 g (12 oz.) butter beans, blanched and peeled
- 180 g (6 oz.) country ham
- 1 ham hock
- 1 large carrot
- 1 medium onion
- 2 stalks of celery
- 285 g (1 1/4 cups) mineral water
- 1 tsp. lemon juice
- 2 tbsp. butter
- 1 tbsp. extra virgin olive oil
- 1 shallot, minced
- Salt and pepper
Method

Country ham juice

  1. Dice the ham, carrot, onion and celery. 
  2. Place them in a pot with the ham hock; cover with water and bring to a boil. 
  3. Reduce the heat and simmer for 1 hour; whisk in the butter. Set aside. 

Vegetables

  1. Sauté the mushrooms in a drizzle of olive oil with the minced shallot. 
  2. When the mushrooms are tender, add the butter beans. Season with salt and pepper and set aside. 

Cooking the halibut and serving

  1. Season the halibut and sear for 1 minute on each side. 
  2. Place the vegetables into deep plates; place the halibut on top. Spoon on the juice and serve immediately.
