Carrot Salad Recipe

Ingredients
- Grated raw carrots
- Chopped shallots
- Sea salt
- Black or pink pepper
- Orange zest
- Raisins
Orange vinaigrette
- 1 part orange juice to 2 parts oil
- A pinch of sugar or a spoonful of honey to taste
Method
- Prepare the vinaigrette.
- Grate the carrots.
- Combine all the ingredients in a bowl.
- Cover with plastic wrap and refrigerate overnight.
