Chanterelle Soup Recipe

Ingredients
For 4 servings
- 3 tbsp. butter
- 50 ml (1/4 cup) finely chopped onion
- 400 g (14 oz.) chanterelle mushrooms, coarsely chopped
- 3 tbsp. flour
- 800 ml (3 1/4 cups) vegetable stock
- 200 ml (3/4 cup) heavy cream
- Salt and freshly ground pepper
- 50 ml (3 tbsp.) chopped parsley
Method
- Sweat the onion and mushrooms in butter until the onion is translucent but not browned.
- Stir in the flour and cook briefly.
- Pour in the vegetable stock, stirring constantly. Simmer for 15 minutes.
- Add the seasonings and cream. Bring to the boil.
- Sprinkle the parsley on top just before serving. Serve with toast and butter.
