Chocolate Mint Cookies Recipe

- 300 ml (1 1/4 cup) all-purpose flour
- 1 tbsp. baking powder
- 125 ml (1/2 cup) butter
- 1 tsp. crème de menthe (Mint liqueur), optional
- 1 beaten egg
- 250 g (9 oz.) mint Chocolate
- A pinch of salt
Method
- combine the flour, salt and baking powder;
- cream the butter, sugar, vanilla and egg;
- break the chocolate into small pieces; combine all the ingredients; refrigerate for 1 hour;
- place in small mounds on a non-stick cookie sheet;
- bake at 180°C (350°F ) for 10 - 15 minutes or until the cookies are lightly browned;
- cool before removing from the pan with a spatula.
Variations
- 125 g (4 oz.) semi-sweet chocolate and 125 g (4 oz.) white chocolate
- 250 g (8 oz.) semi-sweet chocolate and 250 g (8 oz.) walnuts
