Coureur des Bois Chocolate Mousse for two Recipe

Chef's Note
A quick and easy recipe for chocolate mousse flavored with Coureur des Bois maple cream. This rich and creamy dessert is the perfect indulgence for an intimate romantic meal.
Note: Prepare the mousse a day ahead - it will be even better. Garnish with whipped cream just before serving.
Ingredients
For 2 servings
- ⅔ cup chopped dark chocolate
- 1/4 cup milk
- 2 tsp. raw sugar
- 185 ml / 3/4 cup 35% whipping cream
- 3 Tbsp. Coureur des Bois maple cream
- 1/4 cup red berries (strawberries, raspberries, etc..)
Method
- Place the dark chocolate in a medium bowl.
- Combine the milk and sugar in a small saucepan and bring to a boil.
- Pour the steaming milk over the chocolate and let sit for 2-3 minutes until the chocolate is melted.
- Whisk the ganache only in the centre of the bowl until smooth. Let cool to room temperature.
- Whip the cream to soft peaks.
- Continue whipping, gradually adding the Coureur des Bois maple cream.
- Gently fold half of the whipped cream into the ganache, reserving the rest for serving.
- Pour the mousse into glasses or glass cups and refrigerate for at least 2 hours before serving.
- Just before serving, garnish with Coureur des Bois whipped cream and berries.
- Enjoy.
