Note: Prepare the mousse a day ahead - it will be even better. Garnish with whipped cream just before serving.

Ingredients
For 2 servings

- ⅔ cup chopped dark chocolate
- 1/4 cup milk
- 2 tsp. raw sugar
- 185 ml / 3/4 cup 35% whipping cream
- 3 Tbsp. Coureur des Bois maple cream
- 1/4 cup red berries (strawberries, raspberries, etc..)
Method
  1. Place the dark chocolate in a medium bowl.
  2. Combine the milk and sugar in a small saucepan and bring to a boil.
  3. Pour the steaming milk over the chocolate and let sit for 2-3 minutes until the chocolate is melted.
  4. Whisk the ganache only in the centre of the bowl until smooth. Let cool to room temperature.
  5. Whip the cream to soft peaks.
  6. Continue whipping, gradually adding the Coureur des Bois maple cream.
  7. Gently fold half of the whipped cream into the ganache, reserving the rest for serving.
  8. Pour the mousse into glasses or glass cups and refrigerate for at least 2 hours before serving.
  9. Just before serving, garnish with Coureur des Bois whipped cream and berries.
  10. Enjoy.
