Cabot Trail Fudge Recipe

Ingredients
- 550 g / 2 ½ cup brown sugar
- 125 ml / ½ cup Cabot Trail maple cream
- 125 ml / ½ cup 35% cream
- 4 Tbsp. salted butter
- 1 Tsp. white chocolate
- A dash of vanilla extract
Method
- In a saucepan over high heat, place brown sugar, Cabot Trail maple cream, and cream.
- Cook until the thermometer reaches 110°C / 220°F.
- Add the butter and vanilla and cook until it reaches 112°C / 224°F.
- Remove from heat and stir in the white chocolate.
- Cool over an ice bath, while mixing until the mixture is smooth.
- Pour into a buttered mold and spread evenly with a spatula.
- Let it cool until the maple fudge sets and cut into portions.
