Clam Chowder Recipe

- 75 ml (5 tbsp.) butter or margarine
- 75 ml (5 tbsp.) flour
- 1.5 liters (6 cups) diced potato
- 50 ml (3 tbsp.) minced celery
- 50 ml (3 tbsp.) minced green peppers
- 50 ml (3 tbsp.) minced red pepper
- 1 onion, minced
- 450-500 g (1 lb.) Clams, with their juice
- 1 liter (4 cups) water
- 1/4 tsp. tarragon
- 1/4 tsp. thyme (optional)
- 1/4 tsp. chervil
- 1/4 tsp. chopped parsley
- Salt and pepper
- 50 ml (3 tbsp.) heavy cream (35%)
Method
- Sweat the celery, onion and peppers in butter over low heat;
- add the water, potatoes and clam juice.
- Season and cook for about 15 minutes.
- Add the clams and cook 10 minutes longer.
- Just before serving, add the cream, heat and serve.
