Clam Chowder

Ingredients
- 75 ml (5 tbsp.) butter or margarine
- 75 ml (5 tbsp.) flour
- 1.5 liters (6 cups) diced potato
- 50 ml (3 tbsp.) minced celery
- 50 ml (3 tbsp.) minced green peppers
- 50 ml (3 tbsp.) minced red pepper
- 1 onion, minced
- 450-500 g (1 lb.) Clams, with their juice
- 1 liter (4 cups) water
- 1/4 tsp. tarragon
- 1/4 tsp. thyme (optional)
- 1/4 tsp. chervil
- 1/4 tsp. chopped parsley
- Salt and pepper
- 50 ml (3 tbsp.) heavy cream (35%)
Method
  1. Sweat the celery, onion and peppers in butter over low heat;
  2. add the water, potatoes and clam juice.
  3. Season and cook for about 15 minutes.
  4. Add the clams and cook 10 minutes longer.
  5. Just before serving, add the cream, heat and serve.
