Chef's Note

Cocktails... French style!

Ingredients
For 1 cocktail

- 8 mint leaves
- 1/2 lime
- 1 drop of Angostura bitters
- 1 dash of sugar cane syrup (optional)
- 60 ml (2 oz.) white Pineau
- Club soda or sparkling water
Method
  1. In a tall glass, gently crush the mint leaves and lime with the bitters and sugar syrup using a muddler or the back of a spoon.
  2. Pour in the Pineau. Cover with ice.
  3. Stir with a long spoon.
  4. Top up with club soda or sparkling water.
  5. Garnish with a sprig of mint. Serve.
