Coconut Bread Recipe

Chef's Note
This bread is very popular in Barbados and can be served with afternoon tea or with a chicken and fruit salad for a light meal.
- 1 kg (2 1/4 lb.) flour
- 2 tsp. instant yeast or baking powder
- A small pinch of salt
- 500 ml (2 cups) grated Coconut
- 200 ml (3/4 cup) sugar + 4 tbsp. for sprinkling
- 1 tsp. vanilla extract
- 1 egg
- 250 ml (1 cup) milk
  1. combine the flour, baking powder and salt; add the coconut, sugar, vanilla and eggs and mix well; 
  2. gradually add the milk, mixing to form a firm but not sticky dough; 
  3. knead for a few minutes; form into 2 loaves and place into greased bread pans; 
  4. sprinkle the tops with a little sugar and bake in a 180° F (350° F) oven for about 1 hour or until golden brown; 
  5. serve warm or cold.
