Chef's Note

This is a refreshing way to end a meal. Use a blender to simplify preparation.

For 4 servings

- 200 ml (3/4 cup) light coco milk
- 200 ml (3/4 cup) coconut cream
- 4 tbsp. sugar
- 2 packets of vanilla sugar
- A small piece of cinnamon stick
- Crushed ice
  1. Pour the light coconut milk into a saucepan and bring to a boil; reduce the heat, add the sugar and vanilla sugar and let dissolve, whisking vigorously;
  2. add the cinnamon stick and let infuse for 10 minutes over low heat;
  3. remove from the heat and let cool; remove the cinnamon stick;
  4. add the thick coconut milk and whisk vigorously; add a little ice and whisk again; pour into glasses and serve.
