For 6 servings

- 600 g (1 lb. 5 oz.) salt Cod, desalted and skin removed
- 750 g (1 lb. 10 oz.) potatoes250 g (8 oz.) finely chopped onion
- 1 beaten egg
- 2 tbsp. oil
- Parsley, salt and pepper
  1. Cook the peeled potatoes in boiling water for 20 minutes; drain and mash with a fork;
  2. place the cod into a large saucepan; cover with water and place over high heat; remove from the heat once the water comes to a boil; poach the cod off the heat for 2 minutes; drain; flake with a fork;
  3. combine the potatoes and cod; blend in the onion, egg, parsley, salt and pepper;
  4. heat the oil in a skillet; spread the mixture in the pan, pressing it down; brown for 2 minutes on each side as for a potato pancake.
