Country-Style Omelet with Taleggio Cheese

For 4 servings

- 8 large Eggs, lightly beaten
- 200 g (7 oz.) Taleggio cheese, diced
- 100 g (1/3 cup) onion, finely chopped
- 100 g (1/3 cup) roasted pepper, peeled and julienned
- Salt, pepper and parsley
- Extra virgin olive oil
  1. In a skillet, sauté the onion in a few tablespoons of oil until it is transparent;
  2. season the beaten eggs with salt and pepper; add the sweet pepper and the onion; cook the mixture in the skillet on both sides until it is still slightly runny inside ("alla lacrima");
  3. slide the omelette onto a oven-proof plate; sprinkle the diced cheese over top; place in a 300° F (150° C) oven until the cheese is melted;
  4. sprinkle with chopped parsley and serve hot.
