Crab and Noodle Bites

Ingredients for 4 servings
- 280 g (10 oz.) Crabmeat
- 180 g (6 oz.) rice vermicelli
- 5 tbsp. coconut milk
- 1 tsp. chili paste
- 1 tbsp. nuoc mam (Asian fish sauce)
- 3 eggs
- 1/2 cucumber
- 1 tbsp. curry powder
- 4 sprigs of cilantro
- Vegetable oil
- A few lettuce leaves
- 12 basil leaves
  1. Preheat the oven to 210° C (425° F).
  2. Cook the vermicelli for 3 minutes in a large pot of boiling water; drain.
  3. Brush some small (4 cm - 1 1/2" wide) molds or ramekins with oil and place a basil leaf into each one. Divide the vermicelli among the molds, forming little nests.
  4. In a bowl, combine the crabmeat, coconut milk, curry, beaten eggs, nuoc mam, chopped cilantro and chili paste.
  5. Place a tablespoonful of this mixture over the vermicelli.
  6. Bake in the oven for 15 minutes.
  7. Serve hot or cold with a few salad leaves and some sliced cucumber.
