Spider crab omelet Recipe

Simple but delicious!
Ingredients
For 4 servings
- 8 eggs
- 1 spider crab
- 1/2 tsp. mustard
- 1 bunch chives
- 50 g (3 tbsp.) butter
- salt and pepper
Method
- Cook the spider crab in court-bouillon.
- Shell it, reserving the meat and coral separately.
- Combine the coral with the mustard. Add the eggs and beat with a fork. Season with salt and pepper.
- Cook as for a regular omelet.
- Garnish with the crabmeat and serve with a nice salad.
