Simple but delicious!

For 4 servings

- 8 eggs
- 1/2 tsp. mustard
- 1 bunch chives
- 50 g (3 tbsp.) butter
- salt and pepper
  1. Cook the spider crab in court-bouillon.
  2. Shell it, reserving the meat and coral separately.
  3. Combine the coral with the mustard. Add the eggs and beat with a fork. Season with salt and pepper.
  4. Cook as for a regular omelet.
  5. Garnish with the crabmeat and serve with a nice salad.
