Cracked Conch

Chef's Note

Conch (pronounced "konk") is a large ocean mollusk with firm, white, peach-fringed meat.

Ingredients
For 4 servings

- 2 eggs
- 125 ml (1/2 cup) milk
- flour
Method
  1. Beat the conch until tender.
  2. Mix the eggs and milk in a large bowl.
  3. Dip the conch in flour until completely covered, then place conch in the milk and egg batter.
  4. Drain the conch for about 2 minutes, then dip in flour again for a second coating.
  5. Fry in oil until light to medium brown.
