Cream of Tomato Soup

Chef's Note
It was common in Quebec to serve this soup with soda biscuits crumbled in it to give it more body.
Ingredients for 4 servings
- 1 liter (4 cups) chicken stock
- 250 ml (1 cup) milk
- 12 Tomatoes, or 1 can
- 2 potatoes, peeled and diced
- 1 leek
- 2 tbsp. butter
- Salt and pepper
  1. Clean and slice the leek; cook gently in butter in a saucepan;
  2. in another saucepan blanch the tomatoes for a few seconds in boiling water; drain; peel and add to the leeks;
  3. add the stock and potatoes; cook gently for 30-40 minutes;
  4. remove from the heat; add the cold milk to cool the mixture slightly;
  5. liquefy in a blender; season with salt and pepper; return to the saucepan and reheat without boiling.
