Creamed Endives

Ingredients
Ingredients for 4 servings
- 750 g (1 lb. 10 oz.) Belgian Endive, sliced into rounds
- 1 tbsp. flour
- 250 ml (1 cup) milk
- 50 g (3 tbsp.) crème fraîche
- 100 g (3 1/2 oz.) butter + 30 g (2 tbsp.)
- Salt, pepper and nutmeg
Method
  1. Melt the butter in a skillet; add the endives, cover, and cook gently for a few minutes;
  2. pour on the cream and cook slowly for 20 minutes;
  3. meanwhile, prepare a béchamel sauce with 30 g (2 tbsp.) butter, the flour and milk;
  4. season with salt, pepper and nutmeg;
  5. pour over the endives; mix well and serve hot as a side dish.
