Chef's Note
This is a traditional side dish with tandoori since the yogurt cools the heat of the chili. 

Depending on the region and the cook, fresh mint is sometimes added. 

It's best to use thick yogurt, since the cucumber will thin it. 

- 1 large Cucumber
- 150 ml (5 oz.) thick Yogurt
- 1 clove of garlic, minced
- 1 big tbsp. fresh chopped Mint (optional)
- 1 big tsp. salt
- 1/2 tsp. grated fresh ginger
- 1/2 tsp. lemon or Tamarind juice
  1. Peel and coarsely grate the cucumber; sprinkle with salt and leave for 1 hour to draw out the water;
  2. combine all the other ingredients in a bowl; 
  3. combine the drained cucumber and seasoned yogurt just before serving.
