Cucumber Soup Recipe

Ingredients for 4-6 servings
- 1 liter (4 cups) chicken stock
- 4 Cucumbers, peeled and cut into pieces
- 2 slices of ginger
- 4 dried mushrooms, soaked in water and sliced
- A few cilantro leaves
- 2 tbsp. light soy sauce
- Salt and pepper
- 100 g (3 1/2 oz.) thinly sliced ham, shrimp pieces or pollock (optional)
  1. bring the chicken stock to a boil;
  2. add the ginger, mushrooms, soy sauce and cucumber pieces and simmer for 20 minutes over low heat;
  3. add the crabmeat, shrimp or ham strips and simmer 5 minutes longer; season with salt and pepper;
  4. add the cilantro leaves and serve.
