Curried Coconut Soup Recipe

Ingredients
For 4 servings
- Milk from 2 grated Coconuts (1 liter / 4 cups), see file
- 2 tsp. arrowroot
- 2 tsp. Curry powder
- 1 liter (4 cups) stock
- 1 onion
- Salt
Method
- Prepare a broth with 2 litres (8 cups) water, some soup bones and an onion; let simmer for an hour, then strain;
- combine the curry powder and arrowroot with a little cold water and add to the broth; let simmer 3 minutes;
- add the coconut milk and heat without boiling; correct the seasoning and serve.
