Custard or Flan with Raisins Recipe

Chef's Note
A traditional recipe from the Dominican Republic. The flan is prepared in a large dish, but you could also make it in individual ramekins and reduce the cooking time accordingly.
Raisins are used here, but you could replace them with quartered fresh grapes or other diced fruit, choosing fruits that are low in water so that the custards will set: raspberries, blueberries, banana...
Ingredients
Ingredients for 6 servings
- 1 can of condensed or evaporated milk
- 65 ml (1/4 cup) water or milk
- A small pinch of salt
- 4 or 5 Eggs, depending on size
- Pure vanilla extract to taste
- 65 ml (1/4 cup) water
- 125 ml (1/2 cup) sugar
- 65 ml (1/4 cup) raisins
Method
- combine the condensed milk, salt, eggs and vanilla in a bowl;
- in a small saucepan, cook the sugar in 65 ml (1/4 cup) water until caramelized; pour into the egg mixture; add the raisins and mix well;
- pour into an ovenproof dish;
- place this dish into a larger pan and half-fill the latter with hot water;
- place in the oven and cook for 45-60 minutes. The flan is done when a knife tip inserted into the center comes out clean.
