Makarska is located at the foot of Mount Biokovo in a natural harbor. It is the economic, cultural and tourist center of the entire region known as “Makarsko Primorje.” If you stay in one of the many beach destinations in the area, save a little room for these nut and spice-filled dumplings. Here it’s traditional to roll them in granulated sugar once they come out of the oven. And to make them even more tempting, they tend to make them larger than normal here!

Dough
- 750 g (1 lb. 10 oz.) flour
- 4 whole eggs + 2 yolks (reserve the whites for the filling)
- 2 tbsp. sugar
- A pinch of salt
- 220 g (8 oz.) butter
- Milk
Filling
- 500 g (18 oz.) roasted ground Almonds
- 3 whole eggs + 2 whites
- A pinch of ground cinnamon
- A pinch of grated nutmeg
- 500 g (18 oz.) sugar
- 2 tbsp. rum, maraschino liqueur or brandy
- Grated zest of 1 lemon
- 1 square of dark chocolate, grated
- 2 tbsp. butter
Method
- Combine all the ingredients for the dough and blend together until smooth.
- In a bowl, combine all the ingredients for the filling.
- Roll the dough out thinly into two long rectangles.
- Place small spoonfuls of the filling at regular intervals over the first rectangle; cover with the second piece of dough.
- Cut into squares or rectangles using a knife or cookie cutter. Pinch the edges to seal.
- Place the ravioli on a baking sheet and bake until nicely golden.
- Roll in sugar as soon as they come out of the oven.
