Gourmet Platter with Blue Cheese Dip

Chef's Note

Use your imagination to vary the pleasure by adding other vegetables (cucumber, broccoli, etc.) or even meats to this platter: chicken strips, ham, etc.

Save time:
Use baby carrots; wash well - no need to peel them. 

Ingredients
For 4 servings

- 170 g (6 oz.) blue cheese (suggestion: Bresse bleu)
- 4 carrots
- 1/2 cauliflower
- 1 yellow pepper
- 1 green pepper
- 125 g (4 oz.) cherry tomatoes
- 16 cornichons
- 2 slices of raw ham
- 50 ml (3 tbsp.) milk
- 2 tbsp. fromage blanc, 20% MF
- a pinch of paprika
Method
  1. Remove the rind from the blue cheese and cut into small cubes. 
  2. Heat the milk in a small saucepan; reduce the heat and add the cheese. Let melt, stirring occasionally. 
  3. Remove from the heat; cool to lukewarm; blend in the fromage blanc and paprika. Mix well. Transfer to a bowl and let cool.

Assembling the skewers and serving
  1. Cut the half cauliflower into florets as small as possible. 
  2. Peel and halve the carrots; cut each half into about 10 sticks.
  3. Seed the peppers and cut into squares. Cut the raw ham into strips.
  4. Prepare mini-skewers consisting of pepper squares, cherry tomatoes, cornichons and strips of ham (folded like an accordion).
  5. On each plate, place some carrot sticks, cauliflower florets and 2 or 3 mini-skewers. Serve with the blue cheese dip.

Side suggestions for a balanced meal: 2 slices of toast and a pear broiled with honey.
