Duck with Vanilla Recipe

Ingredients
Ingredients for 4 servings
- 1 Duck
- 2 Bourbon Vanilla beans
- 3 nice tomatoes
- 1 large onion
- 1 carrot
- 1 level tbsp. flour
- 1 rounded tsp. sugar
- 1 bouquet garni
- Salt and pepper
- A little oil
Method
- Cut up the duck and brown it in very little oil in a heavy sauté pan. When nicely colored, remove most of the fat and add the diced carrot and thinly sliced onion to the pan. Cook slowly until the onion is soft.
- Add the diced tomato, split vanilla beans and flour. Stir well with a wooden spoon to prevent lumps and cook for a few moments.
- Add enough water to come to the top of the duck; add the bouquet garni, salt and pepper. Simmer for 20-30 minutes over low heat. Correct the seasoning.
